Fouquet’s restaurant in St Barth was completely renovated to evoke a chic colonial spirit. Designed by Gilles et Boissier in Paris, result is total elegance incorporating solid hardwoods, wicker furniture, and soft colors, as the perfect setting for the menu created by triple-starred chef Pierre Gagnaire.

Fouquet’s is located in the main building at the Barrière Group’s Carl Gustav Hotel, also completely renovated by our firm. It comprises a bar/restaurant located inside, with a lounge area. A covered gallery, inspired by the decks of a boat, overlooks Gustavia, with the tables and banquettes enjoying a breathtaking panoramic view of the port, and a bird’s eye view of the sunset. An exclusive experience, setting a new benchmark for the island of St Barthelemy.
